I was looking for an alternative to real mayonnaise in a lamb burger I was cooking for a friend of mine. Even though lamb is a fatty meat, I knew it would be tasteful with mayonnaise and in order to that, I started to think about all the alternatives I had to transform a real mayonnaise in an eggless one. Cauliflower as an incredible creamy touch & combined to silk tofu: I had my combo! People forget to use cauliflower in their preparations, it has a smooth taste that perfectly matches with the strength of the lamb meat.

This recipe will only take you 15 minutes and expect steaming the cauliflower, you’ll have no preparation to make. You guys should definitely try it!!
>> You can use it like a real mayo with any of your preparation such as burgers, sandwiches, fries etc… I personally loved it with a piece a good bread, that’s it, that’s all !
180 gr of steamed cauliflower
70 gr of neutral oil (Olive oil will also be super tasty)
100 gr of silk tofu
Salt & Pepper
1/2 garlic clove
1. Put all the ingredients in a food processor or a blender and mix until you get a smooth paste.
2. It’s ready 🙂
